These AIR FRYER FLAG COOKIES are a fun and easy dessert for 4th of July. Cookies made in the air fryer then topped with strawberries, blueberries and whipped cream frosting to look like the American flag.
Ingredients
- COOKIES
- 2 sticks salted butter, softened
- ½ cup sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tsp almond extract
- 2 ½ cups all purpose flour
- 1 tsp baking powder
- ½ tsp salt
- FROSTING
- 8 oz cream cheese, softened
- 16 oz whipped cream, thawed
- TOPPING
- ½ lb fresh strawberries
- ½ lb fresh blueberries
Instructions
- Begin by adding the softened butter and sugar to a large bowl and blend together until a pale yellow. You can use a spoon, hand mixer, or a stand mixer.
- Add the egg to the butter and sugar mixture and stir to combine. Ensure the egg is completely blended in with the butter and sugar mixture.
- Stir in the vanilla extract, almond extract, salt, and baking powder.
- Slowly add the flour to the bowl with the other ingredients. Mix until well combined. The result will be a crumble mixture that should hold its shape when you grab a handful.
- Pour the crumble dough mixture out onto a piece of parchment paper. Knead the dough together for 3-5 minutes to create a solid ball of dough. If your mixture is not holding together enough, move it back to the bowl and slowly add more butter. You can also add another egg if needed.
- Roll the dough out until about 1-2 inches thick.
- Using a 3 inch biscuit cutter, cut out the sugar cookies.
- Lightly spray your air fryer basket with olive oil and place 3-4 cookies inside. Try to not let the cookies touch one another.
- Air fry at 370 degrees fahrenheit for 4-6 minutes. The cookies will keep a pale color on top, but are done when the edges and bottom are browned.
- Allow the cookies to cool completely before adding frosting and topping.
- While the cookies are cooling off, slice your strawberries length wise.
- To make the frosting, mix the cream cheese first for 3-4 minutes or until smooth. Then, slowly fold in the whipped cream. Add half of the mixture to a piping bag with a small star tip. Keep the other half of the frosting in a bowl. Refrigerate the frosting until ready to use.
- To assemble the cookie: add a thin layer of the cream cheese and whipped cream frosting to cover the cookie. Next, add 3-4 blueberries in the upper left portion of the cookie. Finally your strawberries out across the cookie. The result should resemble the American flag.
- To create the waves on the cookie, pipe the cream cheese and whipped topping in three soft, wavy lines across the cookie. Refrigerate until ready to serve.
